Oatmeal Butterscotch Cookies
1 cup butter softened (optional: use butter flavored shortening)
1 cup sugar
1 cup brown sugar
2 eggs
1 tsp. vanilla
1 cup all-purpose flour
1 cup freshly ground whole wheat flour
1 tsp. baking soda
½ tsp. baking powder
½ tsp. salt
2 cups old fashioned oats
1 package of Butterscotch chips
Preheat oven to 350 degrees.
Start by creaming butter and sugars together. Then beat in 1 egg at a time until mixed well. Add vanilla. Mix all dry ingredients except oats in a separate bowl. Slowly add to butter mixture. After mixing the dry ingredients add in the oats. Stir in the butterscotch chips by hand. Drop by teaspoon onto very lightly greased cookie sheet. Bake for 11 to 12 minutes. Do not overbake.
