Kat’s Sweet Whole-Wheat, Whole-Corn bread
½ Cup butter
2/3 Cup Sugar
2 eggs
1 cup buttermilk
½ teaspoon baking soda
1 cup freshly ground corn meal
1 cup freshly ground whole wheat flour
½ teaspoon Salt
Preheat oven to 375 degrees. Melt butter, stir in sugar and then add eggs. Beat until well blended. Combine buttermilk with baking soda and add to butter mixture. Mix salt, cornmeal & flour together and add to wet ingredients stirring until just mixed. Do not over mix! Pour into a greased 8” x 8” pan or you can use a buttered preheated cast iron skillet. (The preheated cast iron skillet will cook in a shorter amount of time.) Use a tooth pick to test doneness. Check between 25 to 30 minutes but note that whole wheat tends to need a little more baking time than all-purpose flour.
